  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup shredded mozzarella or Parmesan
  • ¼ teaspoon salt
  • teaspoon black pepper
  • Toppings
  • ½ cup tomato sauce
  • 1 cup shredded mozzarella
  • ½–1 cup cooked pizza toppings of choice
  • Italian seasoning or oregano
  • Fresh basil

Method

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Prepare Zucchini
  4. Grate zucchini and squeeze firmly in a clean towel until most moisture is removed.
  5. Mix Crust
  6. Combine zucchini, egg, cheese, salt, and pepper until evenly blended.
  7. Shape Crust
  8. Preheat oven to 400°F (200°C). Line a baking sheet with parchment and spread mixture into a thin ¼–½ inch crust.
  9. Pre-Bake
  10. Bake about 10–15 minutes, or until the crust appears firm and lightly golden. Cooking time may vary depending on thickness and oven performance.
  11. Add Toppings
  12. Spread sauce evenly and add cheese and toppings.
  13. Final Bake
  14. Bake about 20–25 minutes, or until the crust edges are golden, the cheese is bubbly, and the center is heated through. Cooking time may vary depending on oven performance.
  15. Serve
  16. Cool slightly before slicing so crust holds together.

Notes

  • Squeeze zucchini thoroughly to remove excess moisture for a crisp crust.
  • Pre-baking ensures the base cooks through before toppings are added.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a 350°F (175°C) oven or microwave until heated through.
