Walking Taco Casserole

Ingredients
  

  • 1 pound ground beef
  • 1 cup chopped onion
  • 3 ounces cream cheese
  • 1 packet taco seasoning
  • 1 4-oz can diced green chilies
  • 2 to 3 cups corn chips
  • 1 cup shredded taco-blend cheese
  • 1 to 2 cups shredded lettuce
  • 1 Roma tomato, chopped
  • Salsa and sour cream, for serving

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Preheat Oven
  4. Preheat oven to 350°F (175°C). Lightly grease a baking dish.
  5. Cook the Beef
  6. In a skillet over medium heat, cook ground beef and onion, breaking up the meat as it cooks, until the beef is fully browned, no longer pink, and reaches a safe internal temperature of 160°F (71°C). Drain excess grease thoroughly.
  7. Season the Mixture
  8. Stir in taco seasoning (and liquid if required by the packet instructions), green chilies, and cream cheese. Cook, stirring, until the mixture is smooth, creamy, and evenly combined.
  9. Assemble the Casserole
  10. Spread a layer of corn chips evenly in the prepared baking dish. Spoon the beef mixture over the chips and spread gently. Sprinkle shredded cheese evenly over the top.
  11. Bake
  12. Bake uncovered for 18–22 minutes, or until the cheese is fully melted, the edges are lightly bubbling, and the casserole is heated through.
  13. Rest and Serve
  14. Remove from the oven and let rest for 5 minutes to allow the casserole to set. Top with lettuce, tomato, salsa, and sour cream just before serving.

Notes

  • Drain beef well to avoid excess grease and maintain proper texture.
  • Bake just until heated through and set; overbaking may dry the filling.
  • Add fresh toppings after baking for best flavor and texture.
  • Refrigerate leftovers within 2 hours and store airtight up to 4 days.
  • Reheat gently until hot throughout before serving.
