Viral Baked Feta Pasta

Ingredients
  

  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes
  • 8 oz pasta (penne, rotini, or similar)
  • 4 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons balsamic vinegar
  • ¼ cup fresh basil, chopped
  • Salt, to taste
  • Black pepper, to taste

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Preheat the oven to 400°F (200°C) and lightly oil a baking dish.
  4. Place the feta block in the center of the dish and scatter the tomatoes around it.
  5. Drizzle with olive oil and add garlic, salt, and black pepper evenly.
  6. Bake about 25–30 minutes, or until the tomatoes are softened and blistered and the feta is very soft and lightly golden.
  7. While the feta bakes, cook the pasta in well-salted water until just tender. Drain and reserve a small amount of pasta water.
  8. Carefully mash the baked feta and tomatoes together until a creamy sauce forms.
  9. Add the cooked pasta and toss gently to coat, adding reserved pasta water if needed for consistency.
  10. Finish with balsamic vinegar and fresh basil. Serve warm.

Notes

  • Use a block of feta for a smoother, creamier sauce.
  • Roast until the tomatoes are soft and blistered and the feta is very soft.
  • Cook pasta just until tender with a slight bite (al dente).
  • Reserve a little pasta water to adjust sauce consistency if needed.
  • Refrigerate leftovers within 2 hours and store in an airtight container for up to 3 days.
  • Reheat gently with a splash of water or broth until evenly warmed.
