Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 medium carrots, diced
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 cup vegetable broth
  • 1 cup corn kernels
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

  1. Before You Begin
  2. Prepare your slow cooker and ingredients as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Heat olive oil in a skillet over medium heat. Add onion, garlic, and bell peppers and sauté 3–4 minutes until softened.
  4. Transfer vegetables to the slow cooker.
  5. Add carrots, beans, crushed tomatoes, tomato sauce, broth, corn, and spices. Stir until evenly combined.
  6. Cover and cook on LOW for about 6 hours or HIGH for about 3½ hours, until vegetables are tender and chili is thickened.
  7. Taste and adjust seasoning if needed. Chili should be hot throughout and steaming.
  8. Let rest 5 minutes before serving to allow heat to distribute evenly.
