Taco Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn canned drained or frozen thawed
  • 1 can 10 oz diced tomatoes with green chiles
  • 1 cup salsa
  • cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional Toppings
  • Sour cream
  • Diced avocado
  • Green onions
  • Cilantro
  • Jalapeños

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook ground beef in a skillet over medium heat until browned; drain excess grease.
  3. Stir in taco seasoning and ¼ cup water, simmering 2–3 minutes.
  4. Layer chips, beef, beans, corn, tomatoes, salsa, and cheeses in the baking dish.
  5. Cover with foil and bake for 25 minutes.
  6. Uncover and bake 10 minutes until cheese is melted and bubbling.
  7. Rest 5 minutes, add toppings, and serve warm.
