Ingredients
  

  • 1 cup chopped pineapple fresh or thawed frozen
  • ¼ cup rice vinegar
  • ¼ cup sugar
  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha
  • ½ tsp minced garlic
  • ¼ tsp ground ginger
  • 1 tbsp cornstarch
  • 1 tbsp water

  2. Measure all ingredients before starting. Use a small saucepan and keep heat at medium to prevent the sugar from scorching. Cooking times and results may vary slightly depending on heat level and pan size.
  3. Add pineapple, vinegar, sugar, soy sauce, chili paste, garlic, and ginger to a saucepan.
  4. Heat over medium, stirring occasionally, and simmer 5–7 minutes until pineapple softens.
  5. Mix cornstarch with water to form a smooth slurry.
  6. Stir slurry into the saucepan and cook 2–3 minutes, stirring constantly, until sauce thickens.
  7. Remove from heat and allow to cool. Store in an airtight container in the refrigerator.
