Sweet Chili Pineapple Sauce

Ingredients
  

  • 1 cup chopped pineapple (fresh or thawed frozen)
  • ¼ cup rice vinegar
  • ¼ cup sugar
  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha
  • ½ tsp minced garlic
  • ¼ tsp ground ginger
  • 1 tbsp cornstarch
  • 1 tbsp water

Method
 

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Combine Ingredients
  4. Add pineapple, rice vinegar, sugar, soy sauce, chili paste, garlic, and ginger to a small saucepan.
  5. Simmer
  6. Place over medium heat and bring to a gentle simmer. Cook about 5–7 minutes, stirring occasionally, until the pineapple softens and releases its juices.
  7. Make Slurry
  8. In a small bowl, whisk cornstarch and water until completely smooth.
  9. Thicken Sauce
  10. Slowly stir the slurry into the saucepan. Cook for about 2–3 minutes, stirring constantly, until the sauce thickens and lightly coats the back of a spoon.
  11. Cool
  12. Remove from heat and Allow the sauce to cool slightly before transferring to a container. The sauce will thicken further as it rests.
  13. Store
  14. Transfer to an airtight container and refrigerate.

• Stir continuously while thickening to prevent lumps.
• Sauce thickens further as it cools.
• Refrigerate within 2 hours in an airtight container up to 7 days.
• Freeze up to 2 months if desired.
• Reheat gently over low heat until warmed through.
