Slow Cooker Chicken Stew

Ingredients
  

  • 2 tbsp olive oil
  • 1 ½ lbs chicken thighs cubed
  • 3 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp salt
  • 6 garlic cloves minced
  • 1 onion diced
  • 3 carrots sliced
  • 2 large potatoes cubed
  • 3 cups chicken broth
  • 1 bay leaf
  • ½ cup milk
  • 1 cup frozen peas
  • Black pepper to taste

Method
 

  1. Before You Begin
  2. Prepare all ingredients and lightly grease the slow cooker insert if needed. Cooking times and results may vary depending on your slow cooker model, ingredient size, and heat setting. Always check that chicken is fully cooked and vegetables are tender before serving.
  3. Prep Chicken
  4. Cut chicken into cubes and season lightly.
  5. Sear Chicken
  6. Heat oil in skillet. Brown chicken 4–5 minutes, not fully cooked.
  7. Fill Slow Cooker
  8. Add chicken, flour, herbs, garlic, onion, carrots, potatoes, and broth. Add bay leaf.
  9. Slow Cook
  10. Cook on LOW 7–8 hours or HIGH 3–4 hours until vegetables are soft. The chicken is fully cooked when it reaches an internal temperature of 165°F (74°C).
  11. Make It Creamy
  12. Add milk and peas. Cook 10–15 minutes more until peas soften and broth thickens.
  13. Serve
  14. Remove and discard the bay leaf before serving
  15. Cooking Notes
    Cooking time varies depending on slow cooker size, heat setting, and ingredient thickness.
    On LOW, cook for 7–8 hours until vegetables are tender and the stew has thickened.
    On HIGH, cook for 3–4 hours, checking earlier if your slow cooker runs hot.
    The chicken is fully cooked when it reaches an internal temperature of 165°F (74°C) at the thickest part.
    If vegetables are not yet tender at the end of the cooking time, continue cooking and check in 20–30 minute intervals.
    Finishing Time
    After adding milk and peas, allow 10–15 minutes for the stew to finish thickening before serving.
