Ingredients
  

  • 2 lbs ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning
  • ½ cup water
  • 1 can 4 oz diced green chilies
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1 can 15 oz nacho cheese sauce
  • 1 package Mexican-style rice cooked
  • 3 cups shredded Colby Jack cheese
  • 10 large flour tortillas
  • Sour cream or yogurt optional
  • Tortilla strips (optional)

Method
 

  1. Before You Begin
  2. Prepare and measure all ingredients as needed. Cooking times may vary depending on skillet heat, beef fat content, and tortilla size. Cook the ground beef until fully cooked through with no pink remaining, and warm tortillas before assembling so they roll easily without cracking.
  3. In a large skillet over medium heat, cook ground beef and onion, breaking the meat apart, until browned and fully cooked through with no pink remaining
  4. Add garlic and green chilies; cook briefly until fragrant. Drain excess grease if needed.
  5. Stir in taco seasoning, water, cumin, and black pepper. Simmer gently for about 5 minutes until well combined.
  6. Prepare Mexican rice according to package directions.
  7. Warm nacho cheese sauce over low heat until smooth.
  8. Warm tortillas briefly in a skillet or microwave until flexible.
  9. Assemble burritos with beef, cheese sauce, rice, shredded cheese, and desired toppings.
  10. Roll tightly. Grill in a skillet for 1–2 minutes per side, if desired, until lightly golden.
  11. Serve warm.
