  • 2 lbs ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • ½ cup water
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • Rice & Cheese
  • 1 package Mexican-style rice, cooked according to package directions
  • 1 can (about 15 oz) nacho cheese sauce
  • 3 cups shredded Colby Jack cheese
  • For Wrapping & Toppings
  • 10 large flour tortillas
  • Sour cream or yogurt (optional)
  • Plain tortilla strips (optional)

Method
 

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. In a large skillet over medium heat, cook ground beef and onion, breaking the meat apart, until browned and fully cooked through with no pink remaining.
  4. Add garlic and green chilies; cook briefly until fragrant. Drain excess grease if needed.
  5. Stir in taco seasoning, water, cumin, and black pepper. Simmer gently for about 5 minutes until well combined.
  6. Prepare Mexican rice according to package directions.
  7. Warm nacho cheese sauce over low heat until smooth.
  8. Warm tortillas briefly in a skillet or microwave until flexible.
  9. Assemble burritos with beef, cheese sauce, rice, shredded cheese, and desired toppings.
  10. Roll tightly. Grill in a lightly oiled skillet over medium heat for about 1–2 minutes per side until lightly golden.
  11. Serve warm.

Notes

  • Cook ground beef until fully browned with no pink remaining and it reaches 160°F (71°C) internally.
  • Simmer seasoned beef gently for about 5 minutes to blend flavors.
  • Warm tortillas before filling to prevent cracking.
  • Refrigerate leftovers within 2 hours in an airtight container for up to 3 days or freeze up to 3 months.
  • Reheat until heated through and steaming (165°F / 74°C).
  • Discard if odor, texture, or appearance changes.
