Sausage Tortellini Soup

Ingredients
  

  • 1 lb Italian sausage
  • 1 yellow onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 6 cups chicken broth
  • 20 oz cheese tortellini
  • 3 cups fresh spinach
  • ½ cup fresh basil or 1 tbsp dried
  • 2 tbsp fresh oregano or 1 tsp dried
  • ¼ cup fresh parsley or 1 tsp dried
  • Salt and black pepper to taste

Method
 

  1. Before You Begin:
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Brown the Sausage
  4. Place a large pot or Dutch oven over medium heat. Add sausage and cook, breaking into small pieces, until fully browned and no longer pink. Drain excess fat if needed.
  5. Cook Vegetables
  6. Add onion, carrots, and celery to the pot. Cook for about 5–7 minutes until the vegetables begin to soften. Stir in the garlic and cook for about 1 minute, just until fragrant. Avoid browning the garlic.
  7. Build the Broth
  8. Pour in crushed tomatoes and broth. Stir well and scrape the bottom of the pot to release browned bits.
  9. Simmer
  10. Bring the soup to a gentle simmer and cook for about 10–15 minutes, or until the vegetables are tender and the flavors have blended.
  11. Add Tortellini
  12. Stir in tortellini and cook according to package directions until tender and heated through.
  13. Finish
  14. Add spinach, basil, oregano, and parsley. Stir until spinach is wilted. Season with salt and pepper to taste. Serve hot.

  16. Sausage should be fully cooked and no longer pink.
  17. Vegetables should be tender when pierced with a fork.
  18. Tortellini should be tender and heated through.
  19. Soup should be hot throughout before serving.
