Roasted Tomato & Garlic Soup

Ingredients
  

  • Roasted Vegetables
  • 2 lbs fresh tomatoes, halved
  • 1 whole garlic head
  • 2 tbsp olive oil, divided (for roasting and sautéing)
  • Salt & black pepper
  • Soup Base
  • 1 small onion, chopped
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream or coconut milk
  • ¼ cup fresh basil leaves
  • ½ tsp red pepper flakes (optional)

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Roast the vegetables
  4. Preheat oven to 400°F (200°C). Arrange tomatoes cut-side up. Drizzle with oil, salt, and pepper.
  5. Cut top off garlic head, drizzle with oil, wrap in foil.
  6. Roast 30–35 minutes, until the tomatoes appear softened and lightly caramelized and the garlic cloves feel soft when pressed.
  7. Sauté onion
  8. Heat oil in a pot. Cook onion 4–6 minutes until softened.
  9. Add roasted ingredients
  10. Squeeze roasted garlic into pot. Add tomatoes, broth, basil, and red pepper flakes.
  11. Blend safely
  12. Blend with an immersion blender until smooth.
  13. If using a standard blender, blend in small batches and vent steam carefully.
  14. Simmer with cream
  15. Stir in cream. Simmer 5–10 minutes on low to combine flavors. Adjust seasoning.
  16. Serve
  17. Spoon into bowls and garnish as desired.

Notes

  • Cook until properly done according to texture and doneness cues, adjusting heat as needed to prevent over- or undercooking.
  • Stir or rotate during cooking if needed for even results and consistent texture.
  • Let the dish rest briefly before serving so heat distributes evenly and structure sets.
  • Refrigerate leftovers within 2 hours in an airtight container.
    Store in the refrigerator up to 3–4 days.
    Reheat gently until warmed through and steaming before serving.
    Discard if odor, texture, or appearance changes.
