Before You Begin
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Cooking times and results may vary depending on your equipment and ingredients.
Scoop 12 tablespoons peanut butter onto a lined tray and freeze for at least 15 minutes.
In a mixing bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
Add eggs and vanilla; mix until fully incorporated.
In a separate bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.
Add dry ingredients to wet ingredients and mix just until combined.
Flatten a portion of dough, place a frozen peanut butter scoop in the center, wrap dough around it, and seal completely.
Place on baking sheet and bake 10–12 minutes until edges are set, tops look slightly crackled, and centers still appear soft.
Let cookies rest on baking sheet 5 minutes, then transfer to a wire rack to cool slightly before serving.
