  • 1 Honeycrisp apple, cored and chopped
  • 1 large bunch broccoli (about 12 oz), cut into small florets
  • ½ cup chopped red onion
  • ½ cup raisins
  • ½ cup sunflower seeds
  • 4 slices bacon, cooked and crumbled
  • Dressing
  • ¾ cup plain yogurt or plain Greek yogurt
  • 2 tablespoons milk
  • 2 tablespoons apple cider vinegar
  • ¼ cup honey
  • Salt and black pepper, to taste

Method

  3. Whisk yogurt, milk, vinegar, honey, salt, and pepper until smooth and creamy. Keep the dressing refrigerated until ready to use.
  4. In a large bowl, combine apple, broccoli, onion, raisins, and sunflower seeds.
  5. Pour dressing over salad and toss gently until evenly coated.
  6. Chill about 30 minutes, or until flavors blend and broccoli slightly softens.
  7. Sprinkle bacon on top just before serving and toss lightly. Serve chilled.
