Homemade Pasta Bake

Ingredients
  

  • 1 lb pasta (penne, ziti, or rigatoni)
  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage (optional)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 (28-oz) can crushed tomatoes or marinara
  • 1 (14.5-oz) can diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups shredded mozzarella, divided
  • ½ cup grated Parmesan, divided
  • ½ cup ricotta, optional

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients. Wash hands and surfaces after handling raw meat.
  3. Preheat Oven
  4. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  5. Cook Pasta
  6. Bring salted water to a boil. Cook pasta according to package directions until al dente, meaning tender but still slightly firm. Drain thoroughly before using.
  7. Cook Meat (If Using)
  8. Heat olive oil in a skillet over medium heat. Add ground meat and cook until browned and no pink remains. Drain excess fat safely.
  9. Sauté Aromatics
  10. Add diced onion and cook about 3–5 minutes, stirring occasionally, until softened. Stir in garlic and cook 30–60 seconds until fragrant.
  11. Make Sauce
  12. Add crushed tomatoes, diced tomatoes, seasoning, salt, pepper, and optional red pepper flakes. Simmer gently for about 5–10 minutes, stirring occasionally, until the sauce thickens slightly. Cooking time may vary depending on heat level.
  13. Combine Ingredients
  14. In a large bowl, mix pasta, sauce, 1 cup mozzarella, ¼ cup Parmesan, and ricotta if using. Stir gently until evenly coated.
  15. Assemble
  16. Transfer mixture to prepared baking dish and spread evenly. Sprinkle remaining mozzarella and Parmesan on top.
  17. Bake
  18. Bake uncovered about 20–25 minutes, or until the cheese is fully melted, the center is hot, and the edges are bubbling. Cooking time may vary depending on oven performance.
  19. Rest and Serve
  20. Let rest 5 minutes before serving to allow the casserole to set.

Notes

  • Cook pasta just until al dente so it holds texture during baking.
  • Let the casserole rest briefly so portions hold together.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
