Homemade Crepes (Easy, Thin & Perfect Every Time)

Ingredients
  

  • 3 tbsp unsalted butter, melted (plus extra for pan)
  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1/8 tsp salt
  • ¾ cup whole milk, room temperature
  • ½ cup water
  • 2 large eggs, room temperature
  • tsp vanilla extract (omit for savory)

Method
 

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients. Use caution when handling hot pans, melted butter, and steam.
  3. Make Batter
  4. Melt butter and let cool slightly.
  5. Add butter, flour, sugar, salt, milk, water, eggs, and vanilla to a blender.
  6. Blend 20–30 seconds until smooth and lump-free.
  7. Rest Batter
  8. Cover and refrigerate 30–60 minutes, or until batter looks slightly thicker and fully hydrated.
  9. Cook Crepes
  10. Heat a lightly buttered nonstick skillet over medium heat.
  11. Pour 3–4 tbsp batter into center and swirl pan immediately to form a thin layer.
  12. Cook 1–2 minutes, or until edges look dry and bottom shows light golden spots.
  13. Flip carefully and cook 20–30 seconds until fully set.
  14. Transfer to plate and repeat.
  15. Serve
  16. Fill with desired sweet or savory fillings and serve warm.

Notes

  • Cook crepes until batter is fully set on both sides for safe texture.
  • Rest batter before cooking to improve flexibility and prevent tearing.
  • Do not leave cooked crepes at room temperature longer than 2 hours.
  • Refrigerate leftovers promptly and store up to 2 days or freeze up to 1 month.
