Method
- Before You Begin
- Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
- Prepare the Crust
- Preheat oven to 375°F (190°C). Roll puff pastry into a tart pan and prick the bottom with a fork. Blind bake for 10 minutes, or until lightly set. Allow crust to cool slightly.
- Make the Filling
- In a bowl, whisk eggs, cream, salt, pepper, and most of the cheese until smooth and fully combined.
- Assemble the Tart
- Pour the custard mixture into the crust. Arrange asparagus in a single layer and sprinkle remaining cheese evenly.
- Bake Safely
- Increase oven temperature to 400°F (200°C). Bake 15–20 minutes, or until:
- center is fully set
- edges are golden
- internal temperature reaches 160°F (71°C)
- no liquid jiggle remains
- Cool
- Remove from oven and let cool 10 minutes before slicing to allow filling to set properly.
- Serve
- Serve warm or at room temperature. Do not leave at room temperature longer than 2 hours.

Pat asparagus dry to prevent excess moisture in the custard.
