Homemade Asparagus Tart

Ingredients
  

  • For the Tart
  • 1 sheet puff pastry, thawed
  • 1 lb fresh asparagus, trimmed
  • 2 large eggs
  • ½ cup heavy cream
  • ½ cup shredded Gruyère, goat cheese, or feta
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional Add-Ins
  • Prosciutto
  • Sun-dried tomatoes
  • Fresh herbs (thyme, dill, basil, parsley, or chives)

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Prepare the Crust
  4. Preheat oven to 375°F (190°C). Roll puff pastry into a tart pan and prick the bottom with a fork. Blind bake for 10 minutes, or until lightly set. Allow crust to cool slightly.
  5. Make the Filling
  6. In a bowl, whisk eggs, cream, salt, pepper, and most of the cheese until smooth and fully combined.
  7. Assemble the Tart
  8. Pour the custard mixture into the crust. Arrange asparagus in a single layer and sprinkle remaining cheese evenly.
  9. Bake Safely
  10. Increase oven temperature to 400°F (200°C). Bake 15–20 minutes, or until:
  11. center is fully set
  12. edges are golden
  13. internal temperature reaches 160°F (71°C)
  14. no liquid jiggle remains
  15. Cool
  16. Remove from oven and let cool 10 minutes before slicing to allow filling to set properly.
  17. Serve
  18. Serve warm or at room temperature. Do not leave at room temperature longer than 2 hours.

Pat asparagus dry to prevent excess moisture in the custard.
