  • Zucchini Fritters
  • 2 medium zucchini, grated
  • ¼ tsp salt (for sweating zucchini)
  • 1 large egg
  • ¼ cup all-purpose flour (or breadcrumbs / gluten-free flour)
  • 1 clove garlic, minced
  • ¼ tsp salt (for batter)
  • ¼ tsp black pepper
  • 2 –3 tbsp olive oil, for frying
  • Lemon Yogurt Dip
  • 1 cup Greek yogurt
  • 1 tbsp fresh lemon juice
  • ½ tsp lemon zest
  • 1 small garlic clove, finely grated
  • tsp salt

Method
 

  1. Before You Begin
  2. Prepare cookware and ingredients as needed. Cooking results and browning levels may vary depending on pan type, heat level, and zucchini moisture.
  3. Prep the Zucchini
  4. Grate zucchini, sprinkle with salt, and let rest about 10 minutes. Squeeze out excess liquid using a clean towel.
  5. Make the Batter
  6. Combine drained zucchini, egg, flour, garlic, salt, and pepper. Mix gently until the mixture holds together.
  7. Fry the Fritters
  8. Heat oil in a skillet over medium heat. Scoop batter into the pan and flatten slightly.
  9. Cook until the fritters are golden on both sides and the centers are fully set with no visible raw egg, flipping once.
  10. Make the Dip
  11. Stir yogurt, lemon juice, zest, garlic, and salt until smooth.
  12. Serve
  13. Serve warm with dip. Allow to cool slightly before eating.

    • Remove as much moisture as possible from zucchini for crisp results.
