Easy Taco Casserole

This easy taco casserole is a comforting layered dinner made with seasoned beef, beans, salsa, cheese, and tortilla chips baked together for a quick, family-friendly Tex-Mex meal.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, canned drained or frozen thawed
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup salsa
  • cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional Toppings
  • Sour cream
  • Diced avocado
  • Green onions
  • Cilantro
  • Jalapeños

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Preheat
  4. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  5. Cook Beef
  6. Cook ground beef in skillet over medium heat until fully browned and no pink remains. Drain excess grease.
  7. Season
  8. Stir in taco seasoning and ¼ cup water. Simmer 2–3 minutes until evenly coated.
  9. Layer
  10. Add crushed chips, beef, beans, corn, tomatoes, salsa, and cheeses into baking dish.
  11. Bake
  12. Cover with foil and bake 25 minutes. Remove foil and bake 10 minutes until cheese is melted and casserole is bubbling around edges.
  13. Rest & Serve
  14. Let casserole rest 5 minutes before serving. Add toppings if desired and serve warm.

Notes

Brown the ground beef fully for the best flavor and texture.
• Drain beans and tomatoes well to prevent excess moisture in the casserole.
• Let the casserole rest briefly after baking so the layers set before serving.
• Refrigerate leftovers within 2 hours and store in an airtight container up to 3–4 days.
• Reheat portions in the microwave or a 350°F (175°C) oven until warmed through.
