Ingredients
  

  • lbs boneless skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 can (4 oz) diced green chilies, undrained
  • 4 cups low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz cream cheese, softened and cubed

Method

  2. Prepare your slow cooker and ingredients as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Place chicken breasts in the bottom of the slow cooker.
  4. Add beans, onion, garlic, and green chilies on top.
  5. Sprinkle cumin, oregano, chili powder, salt, and black pepper evenly.
  6. Pour chicken broth over everything. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the chicken reaches an internal temperature of 165°F (74°C) and shreds easily.
  7. Remove chicken to a plate and shred using two forks, then return it to the slow cooker.
  8. Add cream cheese cubes and stir until fully melted and smooth with no visible lumps.
  9. Taste and adjust seasoning. Serve warm.

Notes

    • Cook on LOW 6–8 hours or HIGH 3–4 hours until chicken reaches 165°F (74°C) for safe doneness.
    • Keep the lid closed during cooking to maintain steady heat and proper texture.
    • Refrigerate leftovers within 2 hours in an airtight container.
    • Store in the refrigerator for up to 3–4 days or freeze for up to 3 months.
    • Reheat gently until hot and steaming throughout before serving.
    • Discard if odor, texture, or appearance changes.
