Ingredients

  • 1 lb chicken sausage, sliced
  • 1 medium sweet potato, diced, into small cubes
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 small onion, sliced
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 tablespoon soy sauce or balsamic glaze (optional)

Method

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  4. Add the diced sweet potatoes in an even layer and cook, stirring occasionally, until lightly golden and tender. Remove from the skillet and set aside.
  5. Add the sliced chicken sausage to the same skillet and cook, turning occasionally, until lightly browned and heated through. If using raw sausage, cook until it reaches an internal temperature of 165°F (74°C). Remove from the skillet and set aside.
  6. Add the remaining olive oil to the skillet, then add the broccoli, zucchini, and onion. Cook, stirring occasionally, until vegetables are tender with lightly caramelized edges.
  7. Return the cooked sweet potatoes and sausage to the skillet.
  8. Season with garlic powder, smoked paprika, salt, and black pepper.
  9. Drizzle with soy sauce or balsamic glaze if using, then toss gently to combine and heat through.
  10. Remove from heat and serve warm.

Notes

  • Cut vegetables evenly for consistent cooking.
  • Cook sweet potatoes first so they soften properly.
  • Avoid overcrowding skillet to promote browning.
  • If using raw sausage, cook until it reaches 165°F.
  • Refrigerate leftovers within 2 hours and store airtight up to 3 days.
  • Freeze cooked portions up to 2 months.
  • Reheat gently in skillet or microwave until hot throughout.
