Ingredients

  • 10–12 lasagna noodles
  • 32 oz alcohol-free marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese, divided (alcohol-free)
  • ½ cup grated Parmesan cheese (alcohol-free)
  • 1 large egg
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fully cooked ground beef or sausage (optional, alcohol-free)
  • Sautéed vegetables (optional)

Method

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Cook lasagna noodles according to package directions until flexible enough to roll. Drain and lay flat on a clean towel to prevent sticking.
  4. In a large bowl, combine ricotta, egg, 1 cup mozzarella, Parmesan, basil, oregano, salt, and pepper. Mix until evenly combined.
  5. Spread a thin layer of marinara sauce across the bottom of a baking dish to prevent sticking and promote even heating.
  6. Lay one noodle flat and spread cheese mixture evenly across it. Add optional cooked meat or vegetables if using. Roll gently and place seam-side down in dish. Repeat.
  7. Spoon remaining marinara over rolls and sprinkle with remaining mozzarella.
  8. Cover dish with foil and cover dish with foil and bake at 375°F (190°C) for about 30–40 minutes, or until the sauce is bubbling and the roll ups are heated through and reach an internal temperature of 165°F (74°C).
  9. Uncover briefly near the end so cheese melts evenly and lightly browns.
  10. Let rest 5–10 minutes before serving so filling sets and portions hold together.
