Prepare Ingredients
Trim excess fat from beef and cut into evenly sized cubes for consistent cooking.
Layer Slow Cooker
Place beef into slow cooker and sprinkle spices evenly over the top.
Add Aromatics & Liquids
Add onion, garlic, ginger, coconut milk, tomato sauce, and broth.
Stir Gently
Mix just until combined. Do not over-stir.
Cook
Cook on LOW 7–8 hours or HIGH 4–5 hours, until beef is tender, pulls apart easily with a fork, and reaches at least 160°F (71°C) internally.
Rest
Let curry sit uncovered 10 minutes before serving to allow sauce to thicken slightly.
