Easy Crockpot Beef Curry

  • lb beef chuck or shoulder, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • Spices
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • ¾ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • Liquids
  • 1 (13–14 oz) can full-fat coconut milk
  • 1 (14–15 oz) can tomato sauce or crushed tomatoes
  • ½ cup beef broth

Method

  2. Prepare your slow cooker and ingredients as needed. Cooking times and results may vary depending on your equipment and ingredients.

  4. Trim excess fat from beef and cut into evenly sized cubes for consistent cooking.
  5. Layer Slow Cooker
  6. Place beef into slow cooker and sprinkle spices evenly over the top.
  7. Add Aromatics & Liquids
  8. Add onion, garlic, ginger, coconut milk, tomato sauce, and broth.
  9. Stir Gently
  10. Mix just until combined. Do not over-stir.
  11. Cook
  12. Cook on LOW 7–8 hours or HIGH 4–5 hours, until beef is tender, pulls apart easily with a fork, and reaches at least 160°F (71°C) internally.
  13. Rest
  14. Let curry sit uncovered 10 minutes before serving to allow sauce to thicken slightly.

  • Use chuck roast for best texture during slow cooking.
  • Keep lid closed while cooking to maintain safe, steady heat.
  • Sauce will thicken slightly as it rests.
  • Cook beef to a minimum internal temperature of 160°F (71°C).
