Easy Cheesy Salmon Casserole

Ingredients
  

  • 4 large eggs
  • 1 can (10.75 oz) cream of mushroom soup
  • 1 teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 15 oz cooked salmon, flaked
  • 1 red bell pepper, diced
  • 1 white onion, diced
  • cups frozen peas, thawed
  • 8 oz cheddar cheese, shredded
  • ½ cup breadcrumbs

Method
 

  1. Before You Begin
    Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  2. Preheat the oven to 350°F (175°C). Lightly grease an 11 × 7-inch baking dish.
  3. In a large bowl, whisk the eggs until smooth. Stir in the cream of mushroom soup, thyme, and black pepper until evenly combined.
  4. Gently fold in the cooked salmon, bell pepper, onion, peas, half of the shredded cheese, and half of the breadcrumbs, mixing just until combined.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Bake uncovered for about 40 minutes, until the casserole is heated through, the center no longer looks wet, and the edges are lightly bubbling.
  7. Sprinkle the remaining cheese and breadcrumbs over the top and return to the oven for about 5 minutes, until the topping is lightly golden.
  8. Remove from the oven and let rest for 5–10 minutes before serving.

Notes

• Use cooked salmon that is gently flaked so the texture stays tender.
• Avoid overmixing the filling to keep the casserole light and structured.

• Bake until the center appears set and the edges lightly bubble.

• Let the casserole rest briefly before slicing so it holds together better.
