Ingredients

  • Dry Rub
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cumin
  • Salt & pepper, to taste
  • Ribs
  • 2 racks baby back or St. Louis-style ribs
  • BBQ Sauce
  • 1 cup ketchup
  • ¼ cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 1 tsp garlic powder
  • ½ tsp chili powder
  • Salt & pepper, to taste

Method

  1. Before You Begin:
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Prepare Ribs
  4. Remove membrane from back of ribs. Pat dry thoroughly and trim excess fat.
  5. Apply Dry Rub
  6. Mix brown sugar, paprika, chili powder, garlic powder, onion powder, cumin, salt, and pepper. Coat ribs evenly on all sides.
  7. Cook Low and Slow
  8. Preheat oven or grill to 275°F (135°C). Place ribs meaty side up on foil-lined pan and cover tightly with foil. Cook 2½–3 hours until ribs are very tender.
  9. Doneness cues: meat pulls back from bones about ½ inch and feels soft when pressed.
  10. Make Sauce
  11. Combine sauce ingredients in saucepan. Simmer 5–7 minutes until slightly thickened.
  12. Caramelize
  13. Remove foil. Brush ribs with sauce. Return to heat uncovered for 10–15 minutes until glaze is glossy and lightly caramelized. Watch closely to avoid burning.
  14. Rest & Serve
  15. Rest ribs 10 minutes before slicing between bones. Serve warm.

Notes

  • Removing membrane improves tenderness.
  • Low heat is essential for a soft texture.
  • Add sauce only near the end to prevent burning.
  • Let ribs rest before slicing to retain juices.
  • Refrigerate leftovers within 2 hours and store airtight up to 3 days.
  • Reheat covered at 350°F until heated through, or warm gently on a grill. Microwave reheating may soften texture.
