Ingredients
  

  • cups milk
  • 2 large eggs
  • ½ cup pure maple syrup
  • ¼ cup melted butter or coconut oil
  • ¼ cup unsweetened applesauce or mashed banana
  • 3 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • cups fresh or frozen mixed berries
  • ½ cup chopped nuts (optional)

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Use old-fashioned rolled oats for best texture. Allow baked oatmeal to rest briefly before slicing.
  4. Preheat the Oven
  5. Preheat the oven to 350°F (177°C). Lightly grease a 9×9-inch or 11×7-inch baking dish.
  6. Mix Wet Ingredients
  7. In a large bowl, whisk together the milk, eggs, maple syrup, melted butter, applesauce, vanilla, and salt until smooth.
  8. Add Dry Ingredients
  9. Stir in the rolled oats, baking powder, and cinnamon until just combined.
  10. Fold in the Berries
  11. Gently fold in the berries, then pour the mixture into the prepared baking dish.
  12. Bake
