  • Chicken
  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • Salt and black pepper, to taste
  • 1 tablespoon cornstarch (optional)
  • Sauce
  • ¼ cup soy sauce (or tamari)
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons toasted sesame seeds
  • Optional: 1 tablespoon brown sugar

Method

  2. Prepare your slow cooker and ingredients as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Season chicken lightly with salt and pepper. If using cornstarch, toss chicken to coat evenly.
  4. In a bowl, whisk soy sauce, honey, vinegar, sesame oil, garlic, ginger, and sesame seeds until smooth.
  5. Place chicken into slow cooker and pour sauce evenly over top.
  6. Cover and cook until chicken reaches 165°F (74°C) internally and is tender:
  7. LOW: about 4 hours
  8. HIGH: about 2 hours
  9. Stir gently to coat chicken in sauce.
  10. Garnish with sesame seeds or green onions if desired.
  11. Let rest 3 minutes before serving.

Notes

    • Use chicken thighs for a juicier texture.
    • Add vegetables during the last hour so they stay tender, not mushy.
    • For thicker sauce, stir in a cornstarch slurry and cook a bit longer until thickened.
    • Refrigerate leftovers within 2 hours and store in an airtight container up to 4 days.
    • Reheat in short microwave intervals or gently on the stovetop with a splash of liquid until heated through.
