Ingredients

  • 1 medium head cauliflower or 4 cups riced cauliflower
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 1 tablespoon chopped fresh basil or parsley
  • Optional: ¼ teaspoon red pepper flakes

Method

  1. Before You Begin:
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients. Handle raw eggs carefully, keep them separate from ready-to-eat foods, and wash hands and surfaces after contact.
  3. Preheat Oven
  4. Preheat oven to 425°F (218°C). Line a baking sheet or pizza stone with parchment paper.
  5. Rice the Cauliflower
  6. Cut cauliflower into florets and pulse in a food processor until it resembles rice (about 4 cups). If using frozen riced cauliflower, thaw and drain well.
  7. Cook the Cauliflower
  8. Microwave riced cauliflower in a large microwave-safe bowl for 5–6 minutes, until softened. Allow to cool to avoid steam burns.
  9. Remove Moisture (Important)
  10. Transfer cooled cauliflower to a clean kitchen towel or cheesecloth. Squeeze firmly to remove at least ½–¾ cup liquid.
  11. Make the Dough
  12. Mix cauliflower, mozzarella, Parmesan, egg, garlic powder, oregano, salt, and pepper until a dough forms.
  13. Shape the Crust
  14. Spread dough on prepared baking sheet into a thin, even circle about ¼ inch thick.
  15. Bake the Crust
  16. Bake for 20–25 minutes, or until edges are golden and the center feels firm. Ensure the egg is fully cooked.
  17. Add Toppings & Finish Baking
  18. Remove crust from oven. Add desired toppings. Bake an additional 8–10 minutes, or until toppings are heated through and cheese is melted.
