Before You Begin
Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
In a mixing bowl, gently combine the ground chicken, scallions, shredded cheese, mayonnaise, salt, and black pepper until just combined.
Divide the mixture into equal portions and shape gently into patties without pressing too firmly.
Heat a grill or skillet over medium heat. Cook the patties about 5–6 minutes per side, turning once, until they are firm to the touch, no longer pink in the center, and reach an internal temperature of 165°F (74°C).
In a separate bowl, combine the avocado, corn, cilantro, olive oil, and lime juice. Season lightly with salt and black pepper and toss gently.
Serve the cooked chicken burgers topped with avocado corn salsa on buns, lettuce wraps, or over greens as desired.
