Ingredients
  

  • For the Chicken Burgers
  • lb ground chicken, preferably thighs
  • 2 scallions, finely chopped
  • 1 cup shredded cheese, (cheddar, gouda, or provolone)
  • ¼ cup mayonnaise
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • For the Avocado Corn Salsa
  • 1 large ripe avocado, diced
  • 1 ear fresh corn, kernels removed
  • cup chopped fresh cilantro
  • ½ tablespoon olive oil
  • Juice of ½ lime
  • Salt and black pepper, to taste
  • For Serving
  • Burger buns or lettuce leaves

Method
 

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. In a mixing bowl, gently combine the ground chicken, scallions, shredded cheese, mayonnaise, salt, and black pepper until just combined.
  4. Divide the mixture into equal portions and shape gently into patties without pressing too firmly.
  5. Heat a grill or skillet over medium heat. Cook the patties about 5–6 minutes per side, turning once, until they are firm to the touch, no longer pink in the center, and reach an internal temperature of 165°F (74°C).
  6. In a separate bowl, combine the avocado, corn, cilantro, olive oil, and lime juice. Season lightly with salt and black pepper and toss gently.
  7. Serve the cooked chicken burgers topped with avocado corn salsa on buns, lettuce wraps, or over greens as desired.

Notes

  • Cook patties until firm, no longer pink, and internal temperature reaches 165°F (74°C).
  • Avoid high heat so burgers cook evenly without drying.
  • Keep raw chicken refrigerated until ready to cook and wash hands after handling.
  • Refrigerate leftovers within 2 hours and store airtight up to 3 days.
