Cheesy Tomato White Bean Bake

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed fire-roasted tomatoes
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 (15 oz) cans white beans, rinsed and drained
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • Fresh basil (optional)

Method
 

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add onion and cook 3–4 minutes until softened.
  4. Add garlic and cook 30–60 seconds until fragrant, stirring constantly.
  5. Stir in tomatoes, seasoning, salt, pepper, and red pepper flakes. Simmer uncovered about 10 minutes, stirring occasionally, until slightly thickened and gently bubbling.
  6. Add beans and cook 5 minutes until heated through and flavors combine.
  7. Sprinkle mozzarella and Parmesan evenly over the top.
  8. Broil 3–5 minutes, watching closely, until cheese melts and turns lightly golden.
  9. Remove from heat, garnish if desired, and serve warm.

Notes

  • Simmer uncovered to thicken sauce and stir occasionally to prevent scorching.
  • Use only oven-safe cookware for broiling.
  • Refrigerate leftovers within 2 hours and store up to 4 days.
  • Reheat until hot throughout before serving.
