Cheesy Cauliflower Grilled Cheese (Low-Carb)

Crispy, low-carb cauliflower “bread” filled with melted cheese for a lighter take on classic grilled cheese—golden on the outside, warm and gooey inside.

Ingredients
  

  • 2 –3 cups riced cauliflower (from 1 medium head)
  • 2 large eggs
  • ¼ cup Parmesan cheese or almond flour
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheese (Cheddar, Mozzarella, Provolone, or mixed)
  • 1 tablespoon olive oil or butter

Method
 

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Rice cauliflower using a food processor or grater until it resembles small grains.
  5. Place riced cauliflower in a clean towel or cheesecloth and squeeze thoroughly until very dry.
  6. In a bowl, combine cauliflower, eggs, Parmesan or almond flour, garlic powder, salt, and pepper until a thick dough forms.
  7. Divide dough into 4 portions and shape into thin squares or rectangles about ¼–½ inch thick.
  8. Bake 15–20 minutes, or until the slices are golden, firm, and hold their shape when gently lifted.
  9. Place shredded cheese between two cauliflower slices to form sandwiches.
  10. Heat oil or butter in a skillet over medium heat and grill sandwiches 2–3 minutes per side until the cheese is melted and the exterior is lightly crisp.

Notes

  • Squeeze cauliflower very dry to help slices hold together.
  • Bake until firm and lightly golden before assembling.
  • Grill over medium heat so the cheese melts without burning.
  • Store leftovers refrigerated and reheat in a skillet or air fryer to keep crisp.
