Ingredients

  • 4 boneless skinless chicken breasts, thinly sliced
  • 2 large eggs beaten
  • 1 ½ cups breadcrumbs or panko
  • 1 cup grated Parmesan cheese, divided
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 ½ cups marinara sauce
  • 4 slices mozzarella cheese
  • cup shredded mozzarella cheese
  • Fresh basil, chopped (optional, for garnish)

Method

  1. Before You Begin
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  4. Arrange three shallow bowls: Parmesan in first, eggs in second, breadcrumbs with seasonings in third.
  5. Coat chicken in Parmesan, dip in egg, then press into breadcrumb mixture until evenly coated.
  6. Heat oil in skillet over medium-high heat and sear chicken about 3 minutes per side until lightly golden but not fully cooked.
  7. Transfer chicken to baking dish. Spoon marinara over each piece and top with mozzarella slices, shredded mozzarella, and remaining Parmesan.
  8. Bake uncovered 25–30 minutes until chicken reaches 165°F (74°C), coating is crisp and golden, and cheese is melted and bubbly.
  9. Rest 3–5 minutes before serving.

Notes

    • Thin, even chicken pieces cook more evenly.
    • Do not overcrowd pan while searing.
    • Use warm sauce so chicken stays hot.
    • Broil briefly for extra browning if desired.
    • Refrigerate leftovers within 2 hours; store airtight up to 3 days.
    • Freeze cooked portions up to 3 months.
    • Reheat in 350°F oven until hot throughout for best texture.
