BBQ Chicken Grilled Cheese Sandwiches

Ingredients
  

  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • cups cooked shredded chicken
  • ½ teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 cup barbecue sauce
  • ¼ cup butter, softened
  • 2 cloves garlic, minced
  • 2 teaspoons fresh parsley
  • 12 slices sourdough bread
  • 12 slices Havarti cheese

Method
 

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Heat olive oil in a skillet over medium heat and cook onion 3–4 minutes until softened.
  4. Add minced garlic and cook 30–60 seconds until fragrant.
  5. Stir in shredded chicken, paprika, Worcestershire sauce, and barbecue sauce. Cook 3–5 minutes until the chicken is heated through and steaming hot throughout.
  6. In a small bowl, mix butter, garlic, and parsley until combined.
  7. Spread garlic butter on one side of each bread slice.
  8. Place bread butter-side down in a clean skillet over medium-low heat.
  9. Layer cheese, BBQ chicken filling, and another slice of cheese. Top with remaining bread butter-side up.
  10. Cook 3–4 minutes per side until bread is golden brown and cheese melts fully.
  11. Remove from heat, rest 1 minute, slice, and serve warm.

Notes

  • If using freshly cooked chicken, ensure it reaches a safe internal temperature of 165°F (74°C) before shredding and assembling.
  • Use medium-low heat when grilling sandwiches to prevent burning before the filling heats through.
  • Reheat cooked chicken until steaming hot before serving.
  • Do not leave cooked food at room temperature longer than 2 hours.
  • Refrigerate leftovers promptly in an airtight container and store up to 3 days.
  • Reheat gently until heated through before serving.
