Before You Begin:
Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredient thickness. Always cook chicken to 165°F (74°C) and rest before dicing.
Season Chicken
Pat chicken dry and rub with olive oil, oregano, tarragon, and salt.
Cook Chicken
Heat a lightly oiled skillet over medium-high heat. Cook chicken about 8–10 minutes per side until fully cooked and internal temperature reaches 165°F (74°C). Rest 5 minutes, then dice.
Prepare Oven
Preheat oven to 375°F (190°C). Place flatbreads on a baking sheet.
Assemble Flatbreads
Spread BBQ sauce evenly over flatbreads. Sprinkle garlic on top. Add mozzarella, diced chicken, bell pepper, and onion.
Bake
Bake about 10–15 minutes, until cheese is melted and edges are crisp and lightly golden.
Serve
Remove from oven, cool slightly, garnish if desired, slice, and serve warm.
