Ingredients
  

  • 2 large chicken breasts
  • 1 tsp olive oil
  • ½ tsp dried oregano
  • ¼ tsp dried tarragon
  • ¼ tsp salt
  • 2 flatbreads (naan or pita)
  • ½ cup alcohol-free BBQ sauce
  • 2 garlic cloves, minced
  • 1 cup shredded mozzarella
  • 1 small red bell pepper, chopped
  • ¼ cup thinly sliced red onion
  • Optional: cilantro, Parmesan, red pepper flakes

Method
 

  1. Before You Begin:
  2. Prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredient thickness. Always cook chicken to 165°F (74°C) and rest before dicing.
  3. Season Chicken
  4. Pat chicken dry and rub with olive oil, oregano, tarragon, and salt.
  5. Cook Chicken
  6. Heat a lightly oiled skillet over medium-high heat. Cook chicken about 8–10 minutes per side until fully cooked and internal temperature reaches 165°F (74°C). Rest 5 minutes, then dice.
  7. Prepare Oven
  8. Preheat oven to 375°F (190°C). Place flatbreads on a baking sheet.
  9. Assemble Flatbreads
  10. Spread BBQ sauce evenly over flatbreads. Sprinkle garlic on top. Add mozzarella, diced chicken, bell pepper, and onion.
  11. Bake
  12. Bake about 10–15 minutes, until cheese is melted and edges are crisp and lightly golden.
  13. Serve
  14. Remove from oven, cool slightly, garnish if desired, slice, and serve warm.

  • Avoid overloading toppings so the flatbread stays crisp.
  • Rest chicken before dicing to keep it juicy.
  • Use freshly shredded cheese for smoother melting.
  • Refrigerate leftovers within 2 hours in an airtight container up to 3 days.
