Ingredients
  

  • Air Fryer Zucchini Fritters
  • 2 medium zucchini, grated
  • ½ teaspoon salt, for draining zucchini
  • 1 large egg
  • cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 1 clove garlic, minced
  • ¼ teaspoon black pepper
  • Olive oil spray
  • Whipped Lemon Cottage Cheese Dip
  • 1 cup cottage cheese (full-fat or low-fat)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon lemon zest
  • 1 small garlic clove, minced
  • Salt, to taste

Method
 

  1. Before You Begin
  2. Preheat and prepare your cookware as needed. Cooking times and results may vary depending on your equipment and ingredients.
  3. Grate zucchini and toss with ½ teaspoon salt. Let rest for 10 minutes.
  4. Squeeze the zucchini firmly in a clean towel until very dry.
  5. In a bowl combine zucchini, egg, flour, Parmesan, garlic, and pepper. Mix until just combined. The mixture should look thick and hold together when scooped.
  6. Preheat the air fryer to 375°F (190°C).
  7. Lightly spray the basket with oil. Scoop about 2 tablespoons of batter per fritter and flatten gently.
  8. Spray tops lightly with oil.
  9. Air fry 10–12 minutes, flipping halfway, until the fritters are golden, firm, and heated through.
  10. Blend cottage cheese, lemon juice, lemon zest, garlic, and salt until smooth and creamy. Chill until ready to serve.

Notes

  • Squeeze zucchini very dry to prevent soggy fritters.
  • Do not overcrowd the air fryer basket; cook in batches if needed.
  • Cook until fritters are golden, firm, and heated through.
  • Refrigerate leftovers within 2 hours and store airtight up to 3 days.
  • Reheat in the air fryer or oven until hot and crisp; avoid microwaving.
